Grandma Edith's Oatmeal Cake

This is my all time favorite cake! I made it recently and thought I'd share! Enjoy!

Oatmeal Cake
1 1/4 Cups Hot Water
1 Cup Rolled Oats
1/2 Cup Margarine
2 Eggs
1 Cup Brown Sugar
1 Cup White Sugar
1 tsp. Vanilla Extract
1 1/2 Cups All-Purpose Flour
1/4 tsp. Nutmeg
3/4 tsp. Cinnamon
1/2 tsp. Salt
1 tsp. Baking Soda

Preheat oven to 350 degrees Fahrenheit.

In a bowl combine hotwater, margarine and oats, let stand until margarine melts.

Add eggs, sugars and vanilla to oat mixture, mix well.

Sift flour, baking soda, nutmeg, cinnamon,and salt into wet mixture, mix well.

Place batter into a buttered cake pan and bake for 40 minutes.


Now there are two different options for the frosting, I'll let you choice which one you like best!

Oatmeal Cake Topping
6 Tbsp. Butter
3/4 Cup White Sugar
1 tsp. Vanilla Extract
1/4 Cup Milk
1/2 Cup Chopped Nuts
1/4 Cup Shredded Coconut (optional)

Heat milk, sugar, butter and vanillabin a sauce pan until butter is melted and sugar is dissolved.

Mix in nuts and coconut.

Pour over baked cake.


Penuche Icing
1/2 Cup Butter
1 Cup Brown Sugar
1/4 Cup Milk
1 3/4 to 2 Cups Powdered Sugar, sifted

In a medium sauce pan melt butter, add sugar and bring to a boil, boil for 2 minutes srirring constantly.

Stir in milk until it comes to a boil. Remove from heat and cool to lukewarm

Once mixture is lukewarm beat in powdwred sugar until it reaches the desired consistency. (If it becomes too stiff add a little hot water)

Frost cake with desired  amount.
